Whenever you don’t understand what to cook… and then the very first word from your mouth comes ‘lets make aloo’.
Potatoes or Aloo is the most favourite and a very common supplement for all Indians and it easily goes with all types of curries as it doesnt have any major flavour of its own ; thereby being flexible into being added to any curry without making a significant change to its taste or flavour. It may not add anything to the curry but never takes away anything out of it.
Today I am going to share the recipe of Dum Aloo which is itself a major curry that doesn’t have any other veggies in it but holds a delicious flavour of its own. It a simple and best recipe by which you can surprise your friends and family along with chapatis, naan, puri and tandoori rotis.

For Frying :
- 11 Baby Potatoes – Boiled
- 1/4 tbsp. Turmeric Powder
- 1/4 tbsp. Red Chilli Powder
- 1/4 tbsp. Salt
- 4 tbsp. Oil
For Cooking :
- 3 tbsp. Oil
- 1 tbsp. Cumin seeds
- 1 Cinnamon Stick
- 2 Cloves
- 5 Black Pepper
- 1 Black Cardamom
- 1/4 tbsp. Asafoetida
- 1/4 tbsp. Turmeric powder
- 1 tbsp. Coriander Powder
- 1 tbsp. Crushed Kasuri Methi
- 4 Tomatoes Paste
- 1 Green Chilli Paste
- 1/2 Ginger Paste
- 10 Cashews Paste
- 1 Deep Fried Onion Paste
- 1 tbsp. Kashmiri Red Chilli Powder
- 1 Cup Water
- 1/4 tbsp. Garam Masala Powder
- Salt ( as needed )
- 1/2 cup finely chopped Coriander
HOW TO MAKE DUM ALOO :
☆ In a bowl, take potatoes, salt, turmeric and red chilli powder and mix well.
☆ Heat oil in pan and shallow fry all the potatoes till golden.
☆ Sieve off the potatoes onto some kitchen tissue and keep aside.
☆ Now again heat oil in the same pan and add Cumin seeds and saute for a minute.
☆ Then add Cinnamon sticks, cloves, black pepper, black cardamom, asafoetida, turmeric, coriander powder and Kasuri methi and saute for some time.
☆ Now add onions, tomato, ginger, green chilli and cashews paste and saute until the raw smell from onion and tomato goes away.
☆ Now add Red chilli powder and saute until the curry smells good and leaves oil in the sides of the pan.
☆ Then add one water ( 1 cup ) in the pan or as required to get the desired consistency of gravy.
☆ Add garam masala powder, salt, coriander leaves and fried potatoes
and toss well.
☆ Cover the lid of the pan cook for some minutes.
☆ Take out the Aloo Dum in a serving bowl and garnish with coriander leaves and Enjoy!
